TPS - How Does It Work?

It has been suggested to me that if I disconnect my TPS then ride the bike, if my little stutter doesn't stop then it's not TPS related (makes sense). However, before I try this I want to know exactly what function it has (apart from obvious " senses the throttle position!). How does the bike make use of the information it receives from the sensor - in short what it does and how it does it. If you can just disconnect it and still ride, surely it does not have a critical function? (Can't believe this could be right, or why have it in the first place). Are there any sources where I can read up on this? Ta for any help on this.
