Front Sprocket Compromise

I recently dropped down a tooth on the front sprocket and have noticed quite a difference in acceleration. I know that the clocks will be out but not sure by how much. The bike accelerates much faster to 160 (allegedly) than before and wondered what the true speed actually was. I have an app on my phone which tracks speeds and is pretty accurate as I have tested it in my car, but I was shocked to find the actual speed was only reading 131 against 160 on the clock. Surely the difference can't be that vast by dropping down by one tooth, so if anyone can shed any light on the speed restrictions would be appreciated.
