Honestly, unless you're going to do track days or racing, there's not probably not going to be much difference for you if they're both designed for the same (or similar) weight range that covers both you and your pillion/ luggage.

It's better to get progressive springs for ordinary road use as they're designed to deal with those sorts of bumpy surfaces in mind, Linear springs work better for smooth track use as they will give a predictable response during straights and corners.

There's a lot more to suspension, of course, (preload, compression/ rebound damping, cartridge setups etc) but that's the simple version.
