Thermostat meant to start opening at 80.5 and be fully open at 95.  Fan switch will be set for just over 95 and rarely (if ever) comes on so coolant temp no normally above 95 so wouldn't expect cylinder head external surfaces to be higher than that.  My guess is about 90 normally.
