I have a Saitek Cyborg Evo stick I was trying to use, but the turn is either full on or full off. Can't get a progressive lean going. Which is stupid!
Have you tried calibrating the controller in both windows and in game? You can often adjust sensitivity and dead zones for controllers. If the controller is cheap though, you may find that it just doesn't support fine adjustments of the axis.
I haven't played the game yet and can't currently justify its pricing despite having several game controllers and a proper race wheel and pedals (a little odd to use for motorbikes though

Nah, the joystick is top-of-the line (or was a few years ago). I couldn't see any adjustment in game for sensitivity, and the same stick works great for Xplane
