What the dyno charts don't tell you is how rapidly the motor accelerates between any given point in the rev range.
So, while the graph climbs at a relatively constant rate, the motor starts to make the additional horsepower a lot quicker, if that makes sense?
In other words, it's exactly what you're saying - that feel isn't always reflected in the graphs.
I should add that I always port the intake stubs and modify the airbox lid when I do a Full Monty.
