Probably would help pick up, but it will drop the mpg even further down - particularly on long journeys, and the FZ1 isn't exactly amazing on that front as stock anyway!
Personally, I'd leave the gearing as it is, and just ride it like a 600 - keep the revs up, and a gear or so lower than you would normally - on my dad's FZ1 under moderate to hard acceleration the front end comes up in first and second gear relatively easily anyway so I'd certainly not want it any lower than it is!
