Water in oil after cylinder head overhaul

All is good now.
I know I placed the head gasket the correct way. Done loads before. I thought about why would it leak. I got paranoid and wondered if my torque wrench was way out. I roughly calibrated it with weights and found it was reading low. I removed my camshafts again and checked the tightness of the bolts. They were quite a bit loose. I tightened all up. Replaced camshafts and retimed the cam chain. Filled with cheap car engine oil and started the engine. All good no more water contamination. Ive changed the oil again and all is clean. Compression is all good, no leaks either.  Thanks for all the good advice. Will get it on the road soon after ive sorted out my crappy original downpipes.
