I have just ordered by new pads and have a set of EBC FA104's in their packaging - there is NO GROOVE on these pads down the middle so it isn't a sign that they are worn. 5mm of pad is loads of life left - my brand new ones are maybe 8mm thick? Basically, if there isn't any material left bar metal then you need to replace them, otherwise you are fine (unless your brakes feel off / bad / crap

Going back to the original post quickly;
EBC, SBS, Galfer etc are manufacturers
- Sintered brakes have the best braking performance with minimal brake dust, but tend to chew up discs more than other types
- Ceramic pads trade off braking performance (more so when they are cold) for not destroying your discs and causes a little (minuscule amounts really) more brake dust than Sintered
- Organic pads are softer so chew your discs the least but don't have the sort of performance as the others. They also tend to produce a lot of brake dust but the braking is more progressive and less bitey / snatchy
So, I have Organic pads on the rear (I like the feel of them) and Ceramics up front
