I'd go for the 600 as a first bike. I ride an fz1 every day, and jumped on my sons fazer 600 yesterday to go to work. I had a smile on my face all the way as its a fun and very capable machine.
I'm the same with go for the smaller bike for a year or two, you won't regret it. And by all means go for the litre bike when you get more experience, and they're focing ace machines!
