I'd agree about newer / better carbs, if your originals have been sitting for years there could be several things wrong with them & its a bollix to pull em in & out repeatedly.
Once its running with a set of better carbs you could concentrate on getting the rest of the bike sorted out, then properly clean / replace everything in the original carbs at your leisure.
For a replacement rear caliper, switch to a Yamaha TRX850 one and the TRX's longer rear brake hose. Fits straight in, works better and is less seizure-prone.
