I had Renthal 758s on my bike when I bought it, have now fitted 658s and its made a big difference. As Ghostbiker said, they give you a more attacking stance and are a little narrower. I also find them easier to control the bike at walking pace. Try changing the bars before going down the changing the risers path.
As for shit brakes, mine had those when I bought it as well, it now has excellent brakes or it did til I put some SBS pads on it!
My suggestion for improving your brakes is, a good clean up of the calipers, stainless braided hoses, decent EBC hh pads and a really good bleeding. Brakes are now spot on.
