I'd never put a 120 tyre on the stock rim either.
Tyre width has nothing to do with reaching the edges. It is about the size of the contact patch. If you want to lean more put pointy models, normally the sportier the rubber, the further the limit.
Also a 170 tyre width is in real life much closer to 160 than to a 180, but it is the tallest.
