Racers hang off so more of the tyre is on the road / track and keeping the bike more upright due to the slip angles and lateral forces involved etc. , they don't ride to the edges if they can help it. One of the replies earlier stated that having 10mm of rubber left is pointless, hence the analogy. Hope this clears thing up on that one.
