And not forgetting the good ol' stir fry....pork or chicken strips, a combination of veg, eg, spring onions, tinned water chestnuts &/or bamboo shoots (cheap!), chopped peppers, small broccoli florets, beansprouts, sliced mushrooms - whatever you fancy or have knocking around. Fry up the meat in a very hot wok (very little oil needed), stirring all the time, then add veg, continue stir frying for a couple of minutes. Add a good dash of Soy Sauce, a good grind of fresh black pepper. Then I just use a bottled sauce - Oyster is a favourite of mine - to finish. Boil up some dried egg noodles et voila! Very quick, v. little washing up, infinite variety with your choice of veg.

Nice Thai curry can also be made in a wok with some Thai curry paste, coconut milk and a selection of veg/meat
