The only thing that has changed, and may be ENTIRELY coincidental, is that I took it for MOT this morning and there were two extended periods of checking the steering lock to lock to check headrace condition. Makes me wonder whether a dirty/lose connection/wire has been upset. Just a pain in the @rse having to strip and inspect.

Hi Bud.
Electrical woes are rife on these old Jap bikes.

Always ensure you've a proven good & fully charged battery with clean / grease free / tight connections before testing electrics.
Test the charging system too (specs in manual), if both check out, move on to checking for faults.

It's entirely possible this issue has been highlighted after an MOT, so could cleaning, MOT tester was only carrying out his checks to confirm throttle cables weren't being affected on lock to lock test, or wiring loom being put under stress affecting lights & steering & wheel bearings were good or not.
At least you're now aware of it.
I wouldn't be too concerned at this point, if bike's starting ok & running well, I'd just keep an eye on things in general, wait till something starts to act up is my advice, unless something obvious is amiss or you're a competent sparky, intermittent gremlins are hard to pin point.

Does lock to lock with ignition on & moving the loom around cause anything abnormal?

Not unknown for wiring to fracture around headstock area, ignition loom is a potential fail point, after all it's a 20 yrs plus copper wiring loom that's been flexed a million times.
Switchgear connectors all terminate above engine near left side ignition coil, you could check for poor/corroded or loose connections there.
Without seeing the bik, my money's on ignition being the likely culprit.

Main loom multi-plug behind left front flasher is a known problem too, especially if bike's been run in winter.
