You would be covered as you've gone to an insurer and purchased a policy. I had something like this with my car, I bought the policy online and got confirmation email through but no docs. When I phoned them a couple of days later it turns out that they had details of the quote and had received the payment but the policy itself had not been set up. Had I been pulled for no insurance I'd have been ok as I had bought a policy, it's not my fault that they cocked it up.
