Can anyone recommend which bars to use for a more upright riding position ?, standard at present but I'd prefer slightly higher.

You can buy bar risers which will give you extra height, however check your cables are long enough to allow you to lift them.

You select two different bars and then scroll down. It shows you an image to demonstrate the difference in height and pull back.
Lots of folk on here go for the ultra low road 758 which, I believe, give a similar feel to the original Yamaha bars, but are much stronger.
I have these fitted with a set of bar risers, that I find quite comfortable. That said, I think the 756 road high would give a similar improvement. I did change my brake hose though to give me a bit more slack for positioning.
Whereabouts are you in the country? If you’re local to Reading, give me a shout. You can always pop by and try mine out for size.
I’m not sure how well you’ll be able to see them in the attached photo?

As SkidT suggests the 756 Road High might be your best bet for replacement bars but you will need to factor in the additional costs of new bar ends or preferably tapping out the bars to take the OEM bar ends which are heavier than replacements which reduces vibration. Bar risers would probably be your best bet and work out cheaper and simpler to fit in the long run, and if they don't work out you could easily return them for a refund within 7 days.

With the standard cables, you won't get much more than about two inches higher unless you use different bars which aren't as wide. I had my four cables extended, re-routed the switchgear cable routing, horn cables and Tracer 700 bars.

Raised about 4 inches but high-speed handling is obviously affected.

where did you get your seat done please?
Did you get a bit of height added to it?
What footpegs did you get?
How much did they lower the pegs?
Was it a pita adjusting the height of the rear brake pedal / gear shift lever?

My OEM seat was altered by:

Second comfiest seat I've had in 30+ years riding. Kept at standard height but I asked them for the gel inserts and also to increase the height at the very front to stop the 'spud bashing' under hard braking :lol
Footpegs were off ebay, of Chinese origin but of surprisingly good quality. I went for the 1 inch / 25mm versions.
Gear shift - very easy to adjust the height, the rear brake was not so good, awkward to change and even then, insufficient height adjustment. Thought about having some parts made up to fix it, but have learned to live with it :(

Ironically, I’ve recently had the seats on my NC750X reupholstered by CM Seats. Like you, I’m very pleased with the results. Soo much more comfortable than the originals, which are, imho, one of the most uncomfortable standard seats ever fitted to a bike.
I’ll probably try for an inch or so extra height, with the gelastic pad, just to try and reduce my knee / hip / peg angles a touch.
This time, I’ll maybe book a ticket for the Triumph factory tour and drop off the seat on the way.
I’ll have a look around for some lower pegs in due course, see how I get on with the seat first.

Not quite sure what can go wrong with them, I suspect negative feedback is due to the usual numpties not checking they are ordering the right item / fitment or not knowing what they are doing in general.

They were fine, no issues fitting them, cut the cable ties, fitted risers, new cable ties, job done.

Update.....just had first ride since fitting the risers, much improved comfort, I'll be keeping them but also I have had the seat altered by a local upholsterer, it was killing my arse, he cut away a portion of the riders section and replaced it with about 1" of softer foam, the blue stuff, best £45 I've spent, I also bought a Corbin seat which I have yet to try but I'm very happy with the altered seat, I was considering selling and getting a BMW but no longer.
