Tried the usual UK performance part makers some years ago (2015) but no one was interested, ended up going to a company in the USA, BrakeTech, who supplied a set of adaptors.Just checked their website and the adaptors are no longer mentioned, might still be worth contacting them. They weren't cheap even then $200 ex-works plus import duty.
I'm using 2003 R6 wheels and FZ1 (unknown year) discs with 6 bolt fixing. rather than the 5 bolt fixing found on Gen 1 wheels.
Yeah perfect. I am just about fitting 99 R1 forks. So the 2003 R6 front wheel should fit too. I will take a look on which year of FZ1 has discs with 6 bolt pattern.Dont you have any picture of your front end too?

I have 320mm discs on the bike now.
SBS makes bigger brake disks and adapters fro them aswell, I just contacted my parts shop to order them for me
Sounds expensive 180 just for the adapters. Here are the links for the front brake discs, wich includes the adaptershttps://www.sbs.dk/products-1/brake-discs/6122
